Ballotine appreciation : 1 / 2 / 3 / 4 / 5 / 6 / 7 / 8 / 9

Turduckens, which are a type of ballotine, have enchanted me foodily forever. I’ve never had turducken but I’ve made other types of ballotine myself–without even realizing it.  None like this one though:

a bustard stuffed with a turkey, a goose, a pheasant, a chicken, a duck, a guinea fowl, a teal, a woodcock, a partridge, a plover, a lapwing, a quail, a thrush, a lark, an ortolan bunting and a garden warbler [ x ]
